Ingredients per serving
- 3 eggs
- 100g (3.5 oz.) cottage cheese
- 250g (8.8 oz.) asparagus(fresh or pickled)
- 150g (5.3 oz.) peas (fresh or frozen)
- 1 organic lemon
- 1 teaspoon rapeseed or olive oil
- salt, pepper
Preparation
- Preheat oven to 180°C (356°F, no convection).
- Peel fresh asparagus, cut into finger-long pieces.
- Wash lemon with hot water, rub dry.
- Grate the zest of the lemon finely.
- Whisk eggs, cottage cheese and lemon zest in a bowl, season with salt and pepper.
- Grease an oven dish with oil.
- Put asparagus and peas into the dish, pour in the whisked eggs.
- Bake the tortilla for approx. 35 minutes on middle rack.
- After end of baking time, carefully remove the tortilla from the edge, cut into pieces.
