Ingredients per serving
- 3 eggs
- 150g (5.3 oz.) spinach (fresh or frozen)
- 3 tablespoons low-fat yogurt
- ½ teaspoon chili flakes (fresh or dried)
- red pepper powder
- 1 teaspoon olive oil
- salt, pepper
Preparation
- Heat up oil in a pan on medium heat.
- Add spinach and stir until it is defrosted or has collapsed.
- Push the spinach to the edge of the pan.
- Break eggs in the middle of the pan and fry for about 4 minutes until it is set.
- Mix chili with yogurt.
- Season yogurt sauce with salt, pepper and some red pepper powder, serve with the eggs.
