Frozen vegetables are better than their reputation, because the nutrients are retained by shock freezing. They are also very convenient as you can buy them in larger amounts, keep in the freezer and take out whenever you need them. This recipe does not need any additional salt because the feta cheese itself is salty enough.

Ingredients per serving
- 100g (3.5 oz.) green beans (frozen)
- 100g (3.5 oz.) broccoli (frozen)
- 100g (3.5 oz.) peas (frozen)
- 100g (3.5 oz.) sugar peas
- 200g (7 oz.) low-fat feta cheese
- 1 lime
- 1 handful of fresh mint
- pepper
Preparation
- Bring a pot of salted water to a boil.
- Blanch vegetables for 5 minutes.
- Pluck mint leaves.
- Crumble feta cheese with hands or chop with a knife.
- Squeeze lime.
- Drain vegetables, sprinkle with feta cheese and mint as long as the vegetables are warm in order to let the feta cheese melt.
- Season with lime juice and pepper
