Ingredients per serving
- 3 eggs
- 1 tablespoon (15g or 0.5 oz.) pumpkin seeds
- 1 tablespoon (15g or 0.5 oz.) sunflower seeds
- 1 tablespoon (15g or 0.5 oz.) linseeds
- 6 (100g or 3.5 oz.) cherry tomatoes
- 1 handful (20g or 0.7 oz.) rocket
- 1 tablespoon cottage cheese
- 1 teaspoon rapeseed or olive oil
- salt, pepper
Preparation
- Roast pumpkin seeds, sunflower seeds and linseeds without any fat in a pan on medium heat for about 3 minutes.
- Meanwhile, wash cherry tomatoes and rocket, pat dry.
- Cut cherry tomatoes in half.
- Whisk eggs in bowl, mix with cottage cheese, season with salt and pepper.
- Add roasted seeds to the egg and cottage cheese mixture.
- Heat up oil in a pan on medium heat, fry tomatoes with cut side facing down for about 2 minutes.
- Pour eggs in the pan, stir-fry for about 2 minutes until eggs are set.
- Serve scrambled eggs with rocket.
