Oatmeal and seeds have a neutral taste. Therefore, you can also eat them with vegetables. In this recipe, you have all of the important ingredients of a meal: good carbs, protein, lots of vitamins and nutrients. Like almost all the other mueslis, it is ideal for preparing at home and taking with you. This is a perfect snack, that is also suitable as breakfast.
If the serving size is too much for you, just use half of all ingredients except for the cottage cheese.

- 50g (2.1 oz.) oatmeal
- ½ cucumber
- 1 bell pepper
- 3 (200g or 7 oz.) tomatoes
- 1 handful of basil leaves
- 2 tablespoons (30g or 1 oz.) linseeds
- 2 tablespoons (30g or 1 oz.) pumpkin seeds
- 200g (7 oz.) cottage cheese
- 4 tablespoons (70g or 2.5 oz.) low-fat yogurt
- 1 lemon
- salt, pepper
Preparation
- Roast linseeds and pumpkin seeds in pan without any fat on medium heat for about 3 minutes.
- Wash cucumber, bell pepper, tomatoes and basil, pat dry.
- Halve cucumber lengthwise, cut into slices.
- Core pepper, cut into strips.
- Cut tomatoes into quarters.
- Cut basil into strips.
- Squeeze lemon.
- Mix oatmeal, vegetables, roasted seeds, cottage cheese and yogurt.
- Season the muesli with lemon juice, salt and pepper.
